Gilthead bream with Mediterranean aromas

We suggest you an extremely easy and yet very tasty recipe, ideal to be prepared during a summer dinner with friends or during a family lunch. With its typically Mediterranean colors and taste, this is the ideal course for those who want to eat healthy and tasty.

Ingredients: 2 medium size gilthead breams, 4-5 cherry tomatoes, 1 medium size genovese type squash, the juice of 1 lemon, some fresh rosemary, 1 garlic clove, one bunch of capers from Pantelleria island, salt, black pepper and some extra virgin olive oil, 1/2 glass of Tonnino Jurnata Grillo DOC Sicilia white wine.

First of all you need to scale, disembowel and rinse the fish with clean water. Once you are done, make some cuts on the sides of the fish and lay it down in a casserole lined with baking parchment paper.

Finely chop the tomatoes, the squash, the capers and the garlic clove; finely chop the rosemary and add it to the rest together with the lemon juice.

Put everything in a bowl and stir until you have a homogeneous mixture.

Adjust the taste with some salt and black pepper and scatter it on the fishes inside the casserole dish.

Drizzle with the Tonnino Jurnata Grillo DOC Sicilia white wine, add some extra virgin olive oil, cover the casserole with aluminum foil and bake in the oven for 20 minutes at the temperature of 180°C.

To be served hot, along with a good glass of Tonnino Jurnata Grillo DOC Sicilia.
